Well one of the latest foodie trends is quinoa!  It's packed with protein and fiber and is gluten-free.  It's also incredibly versatile, you can have it for breakfast, lunch, dinner, or snacks.  Here are some new recipes for you to try so you can get your daily dose of quinoa! White Chicken Chili Recipe

Here is the perfect recipe for those that want to eat healthy, make inexpensive meals, and want to love every bite of their food!  I love this recipe because it is healthy and inexpensive (which is hard to find sometimes), can be eaten as a soup/chili or as a dip because it is so thick and delicious, and this recipe can be frozen for later-use.  This recipe is all-around awesome and I hope you enjoy it as much as I do :)  Serve with tortilla chips for an extra salty and delicious crunch!

Ingredients:
1-2 lbs. of boneless-skinless chicken breast
48 oz. of precooked northern beans (I always use Randall)
1/2 jar (standard size) of mild or medium thick and chunky salsa
8 oz. of monterey jack cheese, cubed or shredded
2 tsp. of cumin
1 Tbsp. of olive oil
Instructions:
1.  Brown the chicken breast over medium-high heat with the olive oil
2.  Combine the browned chicken, beans (including the water in the jar), salsa, cumin, and cheese and simmer for about 10 minutes.
3.  And enjoy!  This is one of those recipes though that tastes better and better the longer it sits.  I keep it on warm or low heat for another couple of hours while stirring occasionally so it gets thick. 

 

Italian Hoagies Recipe

These sandwiches are delicious, super quick to make, and VERY filling!  These tasty little guys are always a crowd pleaser!  You can serve them at a dinner party or on any night you are craving a real Italian hoagie. 

I have also tried this recipe with gluten-free rolls and they were a huge success among those that follow a gluten-free diet.  I usually serve these sandwiches with french fries but anything will surely taste amazing :)

Italian HoagiesServes 4Prep. Time: 10 minutes  Total Time: 15 minutesCost per Serving: Approximately $2.45





Ingredients:
1 tsp. of olive oil
8 oz. (2 ½ cups) of sliced mushrooms
1 cup of thinly sliced onion
4 hero rolls split in half
6 Tbsp. of purchased basil pesto
8 oz. of sliced cooked turkey
2 cups of yellow banana peppers
4 oz. (1 cup) of shredded mozzarella cheese

Directions:

1. Preheat oven to 425F and have a baking sheet ready.

2. Heat the olive oil in a large non-stick skillet over medium-high heat.  Then add the mushrooms and onions and sauté for approximately 5-7 minutes or until the mixture is lightly browned.

3. Spread the slit hero rolls onto the baking sheet and spread both sides with the basil pesto.  Top one half of the roll with the turkey and banana peppers and the other half of the roll with the mushroom and onion mixture.  Proceed to sprinkle the mozzarella cheese on the half with the mushroom and onion mixture. (In the picture shown below, mine look slightly different than yours because I was unable to combine both my mushrooms and onions together because I accommodating for a picky eater.)

4. Place in the oven and bake for approximately 5 minutes or until the mozzarella cheese is melted.
