Cherry Vanilla Cheesecake Bars

Here's a sweet treat that is super-easy to make and tastes amazing!  Perfect for a Valentine's Day dessert!

 
Crust (bottom & top):
1 cup of flour
1/4 cup of brown sugar
1/3 cup of cold butter (I used "I Can't Believe it's Not Butter w/ Olive Oil)
 
Combine these ingredients in a food processor and pulse together until crumbly or make the crumbles by hand (I used my hands--waaay easier & less dishes to clean up afterwards).  Use half of this mixture for the bottom crust and the other half for the crumbles on top. Press the first half in a greased 9X9 baking pan.  Then bake the crust at 350 degrees for 15 minutes. While the crust is cooking you can prepare the cheesecake filling.
 
Cheesecake Filling:
1 cup of cheesecake (8oz. package)
4 tsp. of vanilla extract
1 Tbsp. of lemon juice
1/4 cup of white sugar
1 large egg
 
Blend the ingredients above until light and fluffy. Pour the mixture on the crust and spread evenly.  Then pour a can of cherry pie filling on top of the cheesecake filling.  Then bake at 325 degrees for 25 minutes. Allow to cool completely before cutting & serving (I popped mine in the freezer for an hour because I could NOT wait to eat it). Cover and keep in the fridge when storing.

Nutella Fudge Brownies

These brownies are AMAAAAZING!  They are ooey, gooey, and chewy with crisp corners.  I am never making any other brownie recipe EVER again (that's how good these are).  These brownies are the perfect sweet treat for when you're pulling an all-nighter studying for a big exam and will definitely make a splash when you need to bring a dish to pass.  Be careful though because they are soooo addicting!!

Ingredients:
3/4 cup of all-purpose flour
1/4 tsp. of salt
1/3 cup of 'I Can't Believe it's Not Butter' (I used the one with olive oil)
1 cup of sugar
2 large eggs (I used Egg Beaters instead)
1 tsp. of vanilla extract
1 cup of Nutella

Directions:
1.  Preheat your oven to 350 degrees.

2.  Combine flour and salt in a small bowl and set aside.
3.  Blend butter until light and fluffy using an electric mixer or a whisk (I don't have a mixer so I used a whisk and it turned out great). Mix in sugar, eggs, and vanilla very well.  Then add in the Nutella and mix until thoroughly blended.  Now mix in the flour and salt mixture.
4.  Pour into a square 8-inch greased pan and bake for 32-36 minutes.
